Production of chicken eggs
The Chicken eggs are produced by laying hens from 20 weeks. During laying, eggs are usually collected every morning, but it is also possible to collect them before sunset. Collection should be done as soon as the eggs are laid to prevent the hen from breaking and eating them. The collected eggs are wiped to remove dirt, but avoid washing them so as not to remove the protective layer against bacteria that can attack the egg.
The eggs are collected in cells of 30 eggs. However, at the customer’s request, cells of 15, 25, 30 eggs can be delivered. The eggs must be kept cool (refrigerator) because excessive heat can accelerate the multiplication of bacteria present inside the egg, thus increasing the risk of deterioration. In the absence of a refrigerator, it is important to turn the eggs regularly to allow the faces to be dry at all times. Turning the eggs helps to preserve the moisture inside the shell.
Eating expired eggs can lead to bacterial infections such as salmonella, which may have developed in the expired egg. Symptoms are often similar to those of indigestion or gastroenteritis: diarrhea, nausea, vomiting.
